Potato Soup

Ingredients
  • 2 cups potatoes, diced
  • 1/2 cup onion, chopped
  • 1 cup water
  • 1/2 teaspoon chicken bouillon granules
  • 1/4 cup butter
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups whole milk
  • 3/4 teaspoon sugar
Directions
  • 1. Combine potatoes, onion, water and bouillon in large saucepan.*
  • 2. Cover and simmer until potatoes are tender.
  • 3. In a saucepan, melt butter. Slowly add flour, salt and pepper.
  • 4. Whisk in milk and cook on low until thickened, stirring constantly.
  • 5. Combine milk mixture with potato mixture in saucepan. Stir in sugar.
  • 6. Heat through.
  • 7. Garnish with shredded cheese and bacon bits or with strips of red pepper.
Servings
  • Serves 4
Tips

*For heartier soup, add 1/2 cup carrots, celery or other vegetables.
