French Onion Soup

Ingredients
  • 4 (3/4") French bread slices*
  • 2 large yellow onions
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon flour
  • 3 (14 ounce) cans beef broth
  • 2 cups Swiss cheese, grated
  • 8 teaspoons Parmesan cheese
Directions
  • 1. Preheat oven to 325 degrees. Bake bread until lightly toasted, about 20 minutes.
  • 2. While bread is toasting, coarsely chop onions.
  • 3. In saucepan, heat butter and olive oil. Add onions and sauté 20 minutes on low heat, stirring occasionally. Stir in flour until blended.
  • 4. Slowly add beef broth. Mix well with a whisk.
  • 5. Add salt, according to taste.
  • 6. Bring to full boil, then simmer 20 minutes.
  • 7. Pour soup into 4 oven safe bowls (1 1/2 cup capacity). Fill almost full.
  • 8. Float slice of toasted French bread on top. Add 1/2 cup grated Swiss cheese. Repeat with each bowl.
  • 9. Sprinkle 2 teaspoons Parmesan cheese on top of each serving.
  • 10. Preheat oven to 425 degrees. Bake soup for 10 minutes.
  • 11. Turn on broiler unit. Broil on top oven rack until cheese begins to brown. Watch closely.

  • Serves 6
Tips

*Substitute seasoned croutons for bread. After filling bowls with soup, sprinkle croutons generously over top and add Swiss and Parmesan cheeses. Continue with steps 10 and 11.
