Cream of Pumpkin Soup

Ingredients
  • 1/2 cup onion, minced
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 3 cups chicken broth
  • 1 (15 ounce) can pumpkin
  • 2 tablespoons brown sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon nutmeg
  • 1 cup whole milk
Directions
  • 1. Sauté onion in butter until tender. Add flour and stir.
  • 2. Slowly add broth. With whisk stir in pumpkin, brown sugar, salt, pepper and nutmeg until smooth.
  • 3. Heat to boiling. Reduce heat and simmer five minutes.
  • 4. Stir in milk and cook until heated through.
  • 5. Serve with roasted pumpkin seeds (available in many grocery stores.)
