Carrot Casserole

Ingredients
  • 4 medium carrots, peeled and sliced
  • 2 tablespoons onions, minced
  • 1 tablespoon butter
  • 1 1/2 tablespoons flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon dry mustard
  • 1/8 teaspoon celery salt
  • 1 cup milk
  • 1/8 teaspoon black pepper
  • 1 cup Cheddar cheese, grated
  • 1 cup soft bread crumbs
Directions
  • 1. In saucepan, cover carrots with water and cook until barely tender, about 20 minutes. Drain.
  • 2. Grease 1 quart casserole dish. Preheat oven to 350 degrees.
  • 3. White sauce: In saucepan, sauté onion in butter. Add flour, salt, dry mustard and celery salt. Gradually add milk and pepper. Stir until thickened.
  • 4. Place cooked carrots in dish. Add cheese and white sauce. Sprinkle with bread crumbs.
  • 5. Bake 25 minutes or until bread crumbs are nicely browned.
