Chicken Salad Sandwich

Ingredients
  • 2 cups cooked chicken
  • 1/4 cup mayonnaise
  • 1/2 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup celery, finely chopped
  • 12 leafy lettuce leaves
  • 12 dollar rolls or mini croissants
Directions
  • 1. Chop or shred cooked chicken.
  • 2. Combine mayonnaise, lemon juice, salt, pepper and celery.
  • 3. Stir in chicken until all ingredients are well blended.
  • 4. Refrigerate until ready to serve.
  • 5. To serve, place piece of leafy lettuce on roll or croissant and add heaping tablespoon chicken salad.
Servings
  • Serves 6
Tips

Variation: Add ¼ cup toasted, slivered almonds to chicken mixture.

Chicken Salad: Add grapes and sliced almonds and serve on leafy lettuce leaf.
