Mild Beef Enchiladas

Ingredients
  • 1 pound ground beef (or cooked shredded beef)
  • 1/4 small onion, chopped
  • 1 (15 ounce) can refried beans, optional
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (10 3/4 ounce) can cream of mushroom soup
  • 1 (10 ounce) can mild enchilada sauce
  • 6 (10") flour tortillas
  • 1 cup grated cheese
  • 1/2 head of lettuce, shredded
  • Sour cream, optional
  • Guacamole, optional
Directions
  • 1. Brown ground beef and onion until meat is no longer pink and onion is tender. Add refried beans. Season with salt and pepper. Drain.
  • 2. Mix together soup and enchilada sauce in saucepan. Heat on medium until hot and bubbly.
  • 3. Spray 9" x 13" pan with cooking spray. Pour half the soup/sauce mixture into bottom of pan. Set aside.
  • 4. Place tortillas on microwave safe plate and cover with paper towel. Heat in microwave 20 seconds.
  • 5. Preheat oven to 350 degrees.
  • 6. Spoon about 3 tablespoons meat on one end of each tortilla. Sprinkle 1 tablespoon cheese over meat. Fold edge of tortilla over filling, tuck sides in and roll up.
  • 7. Place rolled tortillas in pan over sauce. Spread remaining sauce over top, covering tortillas well. Sprinkle with remaining grated cheese.
  • 8. Bake uncovered 25 minutes or until very hot and bubbly. Serve over shredded lettuce and top with sour cream and guacamole.
