Ice Cream Pie

Ingredients
  • 2/3 cup brown sugar, packed
  • 1/3 cup butter, softened
  • 1/2 cup nuts, chopped
  • 1/2 cup flaked coconut
  • 2 cups cornflakes, crushed
  • 1 quart ice cream, softened
Directions
  • 1. Mix all ingredients except ice cream. Press into 9" pie plate. Chill.
  • 2. Fill crust* with softened ice cream. Refreeze.
  • 3. Serve topped with hot fudge sauce or berry topping.
Servings
  • Makes 1 (9") pie
Tips

*Substitute prepared graham or chocolate cookie crust, if desired.

Hot Fudge Topping
Ingredients
  • 2 cups sugar
  • 1/4 cup baking cocoa
  • 1/2 cup butter
  • 3/4 cup evaporated milk
  • 2 teaspoons vanilla extract
Directions
  • 1. Stir and heat sugar and cocoa over low heat.
  • 2. Add butter and stir constantly until melted.
  • 3. Gradually add milk and bring to boil. Boil 2 minutes.
  • 4. Remove from heat and cool slightly. Add vanilla.
  • 5. Serve warm.
Berry Topping
Directions
  • 1. Prepare 1 box strawberry or raspberry Danish Dessert mix according to package directions. Chill.
  • 2. Slice 1 pint fresh strawberries and mix into chilled mixture.
