Oatmeal Cake with Coconut Pecan Frosting

Ingredients
  • 1 1/2 cups boiling water
  • 1 cup quick oats
  • 1/2 cup oil or butter, softened
  • 2 eggs
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
Directions
  • 1. Preheat oven to 350 degrees. Grease 9"x 13" baking pan.
  • 2. In a metal bowl, pour boiling water over oats. Let stand while preparing batter.
  • 3. In mixing bowl, mix oil or butter, eggs, sugar and brown sugar.
  • 4. In another bowl, combine flour, soda, salt and cinnamon. Stir gradually into sugar mixture.
  • 5. Add oatmeal and mix well. Spread in prepared pan.
  • 6. Bake 30 minutes. Spread with frosting while hot.

Coconut Pecan Frosting
Ingredients
  • 1 cup brown sugar
  • 1/2 cup evaporated milk
  • 1/2 cup butter
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans*
  • 1 cup coconut
Directions
  • 1. In saucepan, heat brown sugar and milk until sugar is dissolved.
  • 2. Add butter and stir almost constantly until mixture boils and becomes thick, about 3 to 5 minutes. Remove from heat.
  • 3. Add vanilla, nuts, and coconut. Pour on cake while hot.

*Substitute other nuts, if desired.
