Puff Pancake

Ingredients
  • 1/4 cup butter
  • 6 eggs
  • 1 cup milk
  • 1 cup flour
  • 1/8 teaspoon salt
  • fresh fruit of choice
  • whipped cream
Directions
  • 1. Preheat oven to 400 degrees.
  • 2. Place butter in 9" x 13" pan and heat in oven until melted.
  • 3. Whip eggs, milk, flour and salt in blender or with mixer. Pour into prepared pans.
  • 4. Bake uncovered approximately 20 minutes or until puffed and golden brown.
  • 5. Top with fresh fruit and whipped cream.

  • Serves 6
For fancy brunch, prepare in 8" round casserole dish. Reduce Ingredients to:

  • 3/4 cup milk
  • 3/4 cup flour
  • 1/8 teaspoon salt

  • 1. Preheat oven to 400 degrees
  • 2. Place butter in casserole dish and heat in oven until melted.
  • 3. Whip eggs, milk, flour and salt in blender or with mixer. Pour into prepared pan.
  • 4. Bake uncovered approximately 20 minutes or until puffed and golden brown (When you remove from oven, the pancake will collapse, forming a bowl shape.)
  • 5. Fill with fresh peaches, strawberries, kiwi or other favorite fruites.
  • 6. Top with whipped cream
