Breakfast Tortillas

  • 1/2 teaspoon butter
  • 2 eggs, scrambled
  • 1 10 " flour tortilla
  • 2 tablespoons Cheddar cheese, grated
  • 3 thin slices ham
  • 1. In brunch pan, or 8" inch skillet, melt butter.
  • 2. Add scrambled eggs and cook, without stirring, to form an egg pancake. When set, flip and cook briefly on other side.
  • 3. Warm tortilla in microwave for a few seconds. (Or place on cookie sheet, cover with foil and warm in oven for about 2 minutes.)
  • 4. Place egg pancake on tortilla. Sprinkle grated cheese on egg.
  • 5. Heat ham in brunch pan and place on cheese.
  • 6. Fold bottom half of tortilla over filling. Fold in each side and roll into a closed cylinder. Cut in half diagonally.
  • Makes 1 tortilla wrap

Fill tortilla with taco-seasoned cooked ground beef, egg pancake and cheese.

Fill tortilla with cooked sausage, egg pancake and cheese.
