Pumpkin Chocolate Chip Bread

Ingredients
  • 3 eggs, well beaten
  • 1 1/2 cups sugar
  • 1 1/4 cups canned pumpkin
  • 1 cup oil
  • 2 1/4 cups flour
  • 3/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 2 1/4 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 3/4 teaspoon ginger
  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup chopped pecans, optional
Directions
  • 1. Preheat oven to 350 degrees.
  • 2. Grease and flour 2 (8 1/2"x 4 1/2") loaf pans or 12 (3 1/2"x 2 1/2") miniature pans.
  • 3. In large mixing bowl, blend eggs and sugar.
  • 4. Add pumpkin and oil, mixing slightly.
  • 5. In another bowl, combine flour, salt, baking soda, cinnamon, nutmeg and ginger.
  • 6. Gradually add flour mixture to sugar mixture. Mix thoroughly.
  • 7. Fold in chips and nuts, if desired.
  • 8. Pour into prepared loaf pans and bake large loaves 50 to 60 minutes or miniature loaves approximately 22 minutes.

  • Makes 2 (8 1/2"x 4 1/2") loaves or 12 miniature loaves

  • 1. Preheat oven to 350 degrees. Grease muffin pans or line with baking papers.
  • 2. Mix batter for Pumpkin Chocolate Chip Bread.
  • 3. Fill muffin pans 2/3 to ¾ full.
  • 4. Bake approximately 25 minutes. Remove from pans and place on cooling rack.
