Country Potato Salad

Ingredients
  • 4 medium potatoes
  • 1/2 teaspoon salt
  • 1/4 small onion, diced (optional)
  • 1 large dill pickle, diced
  • 3 boiled eggs, chopped
  • 1/2 teaspoon seasoned salt
  • 1/8 teaspoon pepper
  • 1 cup mayonnaise
Directions
  • 1. Cook potatoes by desired method
  • 2. Place cooked potatoes, onion, pickles and eggs in large bowl. Toss together with large fork.
  • 3. Add seasoned salt and pepper.
  • 4. Carefully stir in mayonnaise until well blended.
  • 5. Refrigerate. Add additional mayonnaise if needed.

Tips

*For mashed potato salad, mix while potatoes are still very warm.
