Cornbread

Ingredients
  • 1 cup cornmeal
  • 1 cup milk
  • 1 cup flour
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1/3 cup melted butter or oil
  • 1 egg
Directions
  • 1. Preheat oven to 375 degrees. Grease 8" square baking pan.
  • 2. In a bowl, combine cornmeal and milk. Allow to soak for 3 minutes.
  • 3. In another bowl, mix flour, sugar, salt and baking powder.
  • 4. Add cornmeal mixture, oil and egg to flour mixture. Stir until all ingredients are just blended. Do not over mix.
  • 5. Spread in prepared pan. Bake 25 minutes or until lightly browned.

  • Makes 9 squares

  • 1. Prepare cornbread recipe.
  • 2. Divide batter between 12 greased muffin cups (standard size muffin pan).
  • 3. Bake about 20 minutes until lightly browned.
